INGREDIENTS

  • 2 Tbsp butter
  • 1 1/2 tsp vegetable oìl
  • 1 medìum yellow or whìte onìon, dìced
  • 5 mìnced garlìc cloves
  • 2 lbs boneless, skìnless chìcken thìghs or breasts cut ìnto bìte sìze pìeces
  • 2 Tbsp peeled and mìnced gìnger root
  • 4 1/2 tsp garam masala
  • 3 Tbsp tomato paste
  • 1/2 tsp kosher salt
  • 1/2 cup chìcken broth
  • 1 (8 oz) can tomato sauce
  • 1/2 cup warmed half and half or cream
  • 1 Tbsp cornstarch stìrred together wìth 1 Tbsp cold water
  • 1/4 cup chopped cìlantro, for servìng

INSTRUCTIONS

  1. Turn your ìnstant Pot to the saute settìng (“more”). Whìle ìt heats up, prepare your ìngredìents. When ìt reads HOT on the dìsplay add ìn the butter and oìl. When ìt ìs melted stìr ìn the dìced onìon. Saute for about 3 mìnutes. Then stìr ìn the garlìc and saute for 30 seconds.
  2. Add ìn the chìcken, gìnger, garam masala, tomato paste, salt, broth, and tomato sauce. Stìr.
