Cake:
- 3 cups all-purpose flour
- 2 cups splenda sugar
- 1 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp table salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 cup 1% low-fat buttermilk
- 3 large eggs
- 1/3 cup canola oil
- 3 tsp lemon zest, grated
- 1/2 tsp vanilla extract
- 2 cups diced apples, cooked til soft
Glaze:
- 2 cups powdered sugar
- 2 tablespoons milk (or more if it is too thick)
INSTRUCTIONS
- Mix all “cake” ingredients with mixer until evenly blended.
- Fold in cooked apples.
