INGREDIENTS
- 1 Cauliflower medium head
- 1/2 lb chicken breast cut into bite pieces
- 2 oz bacon fried and chopped
- 2 eggs beaten
- 1 tbsp ginger minced
- 1 cloves garlic minced
- 2 scallion chopped
- 3 tbsp olive oil divided
- 1 1/2 tbsp coconut aminos
- salt and pepper to taste
- Cut the cauliflower into florets and pulse in an exceedingly kitchen appliance till you get rice-sized items. Drain and put aside.
- in an exceedingly pan, heat oil. Fry bacon till crisp, take away and chop into little items.
- Whisk eggs and within the same pan to form disorganized eggs. take away and put aside.
- Heat an added tablespoon of oil and fry chicken items, stirring sometimes, for 7-8 minutes, season with salt and pepper.
- Heat a tablespoon of oil within the pan, add ginger and garlic, cook for thirty seconds. Add cauliflower rice, cowl with a lid and cook on low for 6-8 minutes. Stir in bacon, chicken, scrumble and coconut aminos. Season with salt and pepper if required.
- Garnish with sliced scallions and serve forthwith.
