INGREDIENTS

  • 6 oz. andouille sausage diced
  • 1 Tbsp. olive oil
  • 1/2 cup grits not instant
  • 1 cup milk
  • 1 cup chicken stock
  • 1/2 cup yellow onions diced
  • 1 Tbsp. garlic minced
  • 1 cup white wine
  • 1 cup canned tomatoes petite diced
  • 1 Tbsp. creole seasoning
  • 1 Tbsp. butter
  • 1 tsp. fresh thyme leaves
  • 1 Tbsp. fresh parsley finely chopped
  • 1/4 cup green onions thinly sliced
  • 1 lb. large shrimp 21/25 count or larger
  • 1/3 cup heavy cream

INSTRUCTIONS

  1. Using sauté setting - add oil and sausage to Instant Pot. Cook for about 5 minutes, until fat is rendered and edges are crisp.
  2. Meanwhile - Add grits to oven-safe glass bowl. Add milk and chicken stock to glass bowl and whisk together. Set aside.
  3. Add onions to pot and sauté for about 3 minutes, until softened and translucent. Then add garlic and continue cooking for one minute.
