EASY INSTANT POT PORK TENDERLOIN WITH CREAMY MUSHROOM SAUCE

INGREDIENTS

  • 2 pork tenderloins
  • 2 teaspoons garlic salt
  • 1 teaspoon pepper
  • 2 teaspoons smoked paprika
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 3 cups sliced portobello mushrooms
  • 2/3 cup sherry
  • 1 can cream of mushroom soup
  • 1 cup sour cream
  • 2 tablespoons cornstarch (optional)

DIRECTIONS

  1. Dry the pork tenderloins thoroughly, then season with garlic salt, pepper and smoked paprika. Rub spices  evenly into the pork, and cut in half (so they fit into the pot).
  2. Heat the Instant Pot on SAUTE. Pour the olive oil into the pot when HOT. Add the pork pieces to the pot and brown on all side. Remove from pot and set aside.
