Fluffy Coconut Flour Pancakes

Ingredients

  • 4 eggs
  • ¼ cup milk
  • 3 tablespoons coconut oil (liquid state, not solid*)
  • ¼ cup coconut flour (see link above in post for my recommendation!)
  • 1 tablespoon granulated sugar
  • ¼ teaspoon baking powder
  • ¼ teaspoon sea salt

Directions


  • *NOTE: I liquid my vegetable oil in a very tiny pan over low heat simply till it became a liquid. when holding it cool a second or 2, I then superimposed it to the wet ingredients.
  • Heat a griddle or giant frypan over medium heat.
  • in a very giant bowl, whisk eggs, milk and oil till combined. in a very separate medium bowl, whisk coconut flour, sugar, leavening and salt till well mingling.
  • Add dry ingredients to wet ingredients; stir with a fork till well combined and no lumps stay.
  • Grease griddle or frypan with oil or butter. Drop ladlefuls of batter, a scant ¼ cup every, onto hot griddle. Cook three to four minutes till tiny bubbles begin to make on prime, then flip. Cook on alternative aspect one to two minutes till saute through.
  • Serve heat along with your favorite flapjack toppings
