  • 2 medium zucchinis, cut into bite sized pieces
  • 2 green bell peppers, chopped
  • 1 Tablespoon cumin
  • 1 Tablespoon chili powder
  • 1 1/2 teaspoons oregano
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3-4 cups chicken broth* (see note below)
  • avocado
  • green onions
  • cilantro
  • jalapeño slices, if desired
  • shredded cheddar cheese
  • sour cream or Greek yogurt
