- 1 pound ground beef
- 1 cup diced onion + extra for garnish
- 1 heaping Tablespoon minced garlic
- 2 - 14 ounce cans Red Gold crushed tomatoes
- 1 - 14 ounce can Red Gold diced tomatoes with green chilis, drained
- 2 medium zucchinis, cut into bite sized pieces
- 2 green bell peppers, chopped
- 1 Tablespoon cumin
- 1 Tablespoon chili powder
- 1 1/2 teaspoons oregano
- 1 teaspoon salt
- 1 teaspoon pepper
- 3-4 cups chicken broth* (see note below)
- avocado
- green onions
- cilantro
- jalapeño slices, if desired
- shredded cheddar cheese
- sour cream or Greek yogurt
INSTRUCTIONS
- Saute the ground beef and onions in a large pot until cooked. Drain the grease.
- Add the garlic, tomatoes, zucchini, peppers, spices, and chicken broth. Bring the mixture to a boil.
