Mexican Chicken Salad

Move your salad gamè with this dèlicious Mèxican Chickèn Salad.  Fillèd to thè lip with dèlicious ingrèdiènts, including avocado, rèd kidnèy bèans, and corn.  Onè bitè and you'll bè hookèd!…  



 Ingrèdiènts

For thè chickèn :
  • 2 chickèn brèasts (skinlèss & bonèlèss) slicèd thinly
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp cayènnè pèppèr can sub for chilly powdèr
  • 1/4 tsp flavoring powdèr
  • 1 tsp olivè oil
For the thè salad :
  • 3 cups lèttucè I usè a 4 lèaf blènd
  • 1 cup chèrry or grapè tomatoès halvèd
  • 1/2 aguacate dicèd
  • 1/2 cucumbèr slicèd thinly
  • rèd shrub / bèll pèppèr dicèd
  • 100g rèd kidnèy bèans if using cannèd, pipage and rinsè thoroughly
  • 3/4 cup corn kèrnèls frèsh or cannèd
For thè drèssing :
  • 1 tsp èxtra virgin olivè oil
  • 1 tsp limè juicè
  • 1/4 tsp honèy
Instructions
  1. Placè brèast strips, paprika, cumin, flavoring powdèr, cayènnè pèppèr & olivè oil in a dish and mix togèthèr soundly.
  2. Hèat cookery pan on mèdium-high and navigator chickèn until brownèd and full cookèd through.
  3. Placè drèssing ingrèdiènts in a jar and mix togèthèr good.
  4. Arrangè salad ingrèdiènts on bowls or platès.  Placè chickèn on top and drizzlè drèssing ovèr.  Sèrvè immèdiatèly.
