One Pot Kung Pao Chicken

Ingredients

For the chicken

  1. 2 tbs vegetable oil
  2. 1 1/2 lbs boneless, skinless chicken breast, cut into 1" cubes

  4. 1/2 red bell pepper, diced
  5. 1/2 cup chopped red or white onion
  6. 3 garlic cloves, minced
  7. 4 tbs cornstarch
  8. 3/4 cup cashews or peanuts
  9. Green onion, to garnish

For the sauce

  1. 2/3 cup reduced sodium soy sauce
  2. 1/2 cup rice vinegar
  3. 1/2 cup water
  4. 1/2 cup white granulated sugar
  5. 2 tbs hoisen sauce
  6. 1/2 tsp ground ginger
  7. 1/2 tsp red pepper flakes
  8. 1/4 tsp ground black pepper

Instructions

  • *Prepare all ingredients as mentioned higher than (ie, chop the zucchini, mince the garlic, etc.) before starting*
