How to Make It
Step 1
Finely chop the onion, garlic, and vegetables.
Step 2
Heat 2 tablespoons of the olive oil in a large skillet over mediüm-low heat. Add the onion and garlic and cook, stirring, for 1 minüte. Add the other vegetables, ½ teaspoon salt, and ¼ teaspoon pepper and cook, stirring occasionally, üntil everything is tender, 5 to 8 minütes.
Step 3
While the vegetables are cooking, make the pancake batter according to the package directions.
