I love trying new flavors on classic recipes and this BBQ Chicken Quesadilla is one of my favorites. Filled with your favorite BBQ sauce, chicken, onion, and my favorite, cilantro!
I love quesadillas! It’s usually my go to lunch when Chad is home. They are easy and quick to make and I usually have all the ingredients in my pantry all the time! I changed it up, and went with some BBQ chicken quesadillas. Of course the hubby loved them!
So if you are struggling with simple lunch ideas you will want to keep this one in your back pocket. I used a rotisserie chicken to make this recipe super easy. I pulled the chicken apart and placed it in a bowl. I covered it in our favorite BBQ sauce, added diced onions, and fresh diced cilantro. When I was read to cook it I just spooned on the chicken mix into the tortilla and topped with cheese. This is seriously so good y’all, it’s a must try! Ingredients
- 2 cups Rotisserie chicken (any cooked chicken works)
- 1 cup BBQ sauce
- 1/2 cup Red onion (diced)
- 1/2 cup Cilantro (diced)
- 4 Flour tortillas
- 2 cups Shredded cheese
Instructions
- In a small bowl add chicken, BBQ sauce, red onion, and cilantro. Mix together until chicken is completely coated.
- Warm skillet on medium/low heat and add cooking spray. Place tortilla on skillet and add a spoon full of chicken mix and added 1/2 cup of shredded cheese. Fold tortilla over and allow to cook until cheese has started to melt. Flip and cook on the other side until crispy.
