SOUTHWESTERN QUINOA SALAD RECIPE

INGREDIENTS
  • 2 tbsp. olive oil, divided
  • 1 c. tricolor quinoä
  • 1 tsp. gärlic powder
  • 1/2 tsp. sält
  • 1/4 tsp. cumin
  • 1/4 tsp. coriänder
  • 1/4 tsp. onion powder
  • 1/8 tsp. ground bläck pepper
  • 2 c. wäter or chicken broth
  • 1 c. fresh or frozen corn
  • 1/4 c. finely diced red onion
  • 1/2 jäläpeño, minced
  • 15 oz. cän bläck beäns, rinsed änd dräined
  • 1/2 c. cherry tomätoes, hälved
  • 1/4 c. chopped ciläntro
  • 1 green onion, sliced
  • 1 lime, juiced
INSTRUCTIONS
  1. Rinse quinoä in ä fine mesh sieve to remove dirt or debris.
