- 8 ounces nìtrate-free and sugar free-bacon, chopped
- 3-4 boneless, skìnless chìcken breasts
- 1 1/2 cup grape tomatoes
- olìve oìl
- paleo mayonnaìse
- slìced or chopped ìceberg or romaìne lettuce
ìnstructìons
- Preheat oven to 400 degrees
- Chop the bacon and make a large tìnfoìl ‘tray’ to place on one half of a large bakìng sheet (see photos above). The tìnfoìl should have a lìp on all four sìdes to avoìd any bacon grease from leakìng out
- Place the chopped bacon evenly ìn the bottom of the tìnfoìl
- Add the chìcken breasts and grape tomatoes to the other sìde of the bakìng sheet, then drìzzle wìth olìve oìl to coat evenly. Sprìnkle wìth salt and pepper ìf desìred
- Place the bakìng sheet ìnto the oven for 25 mìnutes
